Cider Brined Pork Chop
  • 3 cups apple cider
  • 2 oz salt
  • 2 oz brown sugar
  • 2 cups cold water
  • 1 pork chop
  • 1 granny smith apple, julienned
  • 3 small red bliss potato, julienned
  • 2 oz butter
  • 1 cup apple cider
  • 2 oz brown sugar
  • 2 oz butter
  • 1 bunch asparagus, cut lengthwise
  1. Boil the apple cider with the salt and brown sugar.
  2. Once boiling add the cold water and remove from the heat.
  3. Cover the pork chop with the brine after it has cooled. Place in the fridge for one hour.
  4. Remove the pork chop from the brine and pat dry. Season with salt and pepper and sear on high heat for about four minutes on each side.
  5. When the pork chop is fully cooked remove from the pan and let rest. Add the remaining apple cider, brown sugar and butter to the same pan. cook this on high heat until the volume has reduced by half.
  6. Saute the potatoes until golden brown, then add the apples and butter. continue cooking until the apples are tender.
  7. Saute the asparagus
